The Icicle radish (Raphanus sativus), is a spring cultivator and a member of the Brassicaceae family along with cabbages, turnips and watercress. Also known as White Naples, White Italian, the Long White and White Transparent.
Diced, sliced or slivered, raw Icicle radishes add crispy texture to salads and relishes. Use to add a peppery accent to tacos, sandwiches, and soups. They can be grilled, braised or roasted. Shred or grate and use as a condiment for sushi and sashimi. Use when making kimchee or pickled carrots.
Selecting and Buying. They should be uniformly firm and smooth with no soft spots or blemishes. Buying: You can find these radishes at farmer’s markets during the spring. Some grocery stores with a wide variety of ethnic foods will also carry them. Procuring: The Icicle Radish grows best in the early spring before the days get warm.
In addition to Asian recipes, Chinese white radish is a creative alternative to potatoes or turnips. Daikons are often pickled and make a unique appetizer, providing vitamin C and calcium in your diet. White radish is also an excellent source of potassium. If you can’t find any daikon in your local grocery store, try an Asian market.
The Icicle can be served as an hors d’oeuvre, as a garnish for salads or sandwiches, or simply as a snack. When selecting, choose the radishes that are firm, crisp, and without blemishes. Store without the leafy tops and place in the refrigerator to keep fresh for four to seven days.
